Banana Oat Pancakes
I attempted these Banana Oat Pancakes from the FIXate cookbook today. So, they are portion fix approved. They were yummy! Tasted somewhat like a banana nut muffin but in a pancake. They are a little dense. I might try mixing in a little water next time. Maybe, they were still pretty good. They were easy too.
The child didn't care for them too much...I should have taken a picture of his face when he tried them. I guess they weren't enough like "normal pancakes". It's sad that our kids are conditioned to only want starchy, unhealthy, non-nutritious foods. We made him eat two. He was not happy. Did make him eat some raspberries and grapes too. :)
I forgot to take a picture of how nice and pretty they looked on my plate with the fruit. But here's the leftovers!
Here's the recipe:
Ingredients:
1 cup almond milk
2 large eggs
1 large ripe banana
1 tsp pure vanilla extract
1 tsp baking powder (gluten free if you're sensitive)
1/2 tsp ground cinnamon
1 dash sea or pink himalayan salt
2 cups dry old fashioned rolled outs (gluten free)
1/2 tsp coconut oil
3 cups fresh mixed berries
Directions:
Combine all ingredients excpet for the coconut oil and berries in blender. Blend until smooth.
Heat oil in nonstick skillet over low-medium heat. I used my griddle set at about 300 degrees.
Each pancake will be about 1/4 cup of the batter. Cook on one side 2-3 minutes until bubbles form around the edges of the pancakes. Flip and good another 1-2 minutes.
Serve with fresh berries.
I did put some organic syrup on mine but with the berries you wouldn't need it.
Serves 8, 2 pancakes is a serving.
Container portions:
The pancakes by themselves are 1 yellow and 1 red.
