Mexican Turkey Zucchini Skillet
So, full discloure that I forgot to take a picture when I was done cooking last night so I'm did swipe this picture from a similar recipe. I started with another recipe I found on Pinterest but doctored it up to make it my own. If you love tacos, this is a healthy alternative to getting your mexican fix without all the extra calories. It's low carb and super easy to make!
Ingredients:
2 medium zucchini, sliced and quartered
2 pounds ground turkey
1 jalapeno (chopped)
1-2 tomatoes (chopped)
2 tbsp chili powder
2 tbsp ground cumin
2 tbsp garlic powder
2 tbsp teaspoon black pepper
2 tbsp onion powder
Directions:
Combine turkey, jalapeno and 1/2 the spices in skillet. Brown turkey in a skillet until cooked through. As turkey is almost browned, add the other half of the spices to give it more flavor.
Cook zucchini in separate skillet (you could do this together if you want - I was feeling kids as well who wouldn't eat it this way) until soft and browned.
Once Turkey and Zucchini are cooked, combine on the plate and top with tomatoes. Depending on your calorie intake preferences, you could add a few more toppings like 1 tbsp shredded cheese, black olives, guacamole, low fat greek yogurt (instead of sour cream) and maybe even just a few crumbled tortilla chips.
