Cilantro Lime Chicken Recipe
Grilled Cilantro Lime Chicken
It's grilling time! And night to NOT turn on the oven. I adapted a recipe I had seen for baked chicken and put it on the grill tonight. Another healthy hit! Check it out.
Ingredients:
3-4 Large Boneless, Skinless Chicken Breasts
Marinade:
3 tablespoons olive oil
4 cloves garlic, minced
4 tablespoons finely chopped cilantro stems and leaves
2 tablespoons lime juice
1 heaping teaspoon red chili flakes

Directions:
Put all ingredients in plastic ziplock back with the chicken breasts and shake until chicken is well coated. Marinate in refrigerator for 15 minutes to 2 hours (the longer the better).
Preheat grill to medium high heat. Add chicken to grill and cook, flipping once, about 5-6 minutes on each side.
I served with grilled broccoli and it was my first attempt at that. I have this grill basket thing that I lined with aluminum foil and then put the broccoli in with some olive oil. Cooked for the same length of time as the chicken and it was yummy.
Also made some "Near East brand" Roasted Red Pepper and Basil Quinoa/Brown Rice mix on the stovetop. The hubby and I thought the grains were great. The boy didn't love it but he ate the rest of the meal, including choking down the broccoli. :)
We even ate outside so no kitchen table clean up.
If you're following Portion fix, one serving (1 chicken breast) would be 1 red, 1 yellow, 1 green and one spoon.
