21 Day Fix approved recipe for Mini Egg Frittatas. Think omelets made in muffin tins that you can freeze to easily eat for breakfast on the go.

What I do is just mix up a bowl full of eggs and/or egg whites, and add whatever meats/veggies you have on hand. My favorites include adding some chopped up ham, bacon, turkey or chicken, mushrooms, green onions, broccoli, black olives, and yellow bell peppers. I also add a little bit of cheese.

Tip: Mix up eggs in one bowl until yolks are blended then Mix all your ingredients in a separate bowl.

Fill the bottoms of each muffin spot with your mixed ingredients then fill about a 1/4 cup of egg on top. The egg will fill in all the spots and you won't end up with all the good stuff floating on top and then your last egg cups with nothing in them.

Top with cheese if desired.

Portion Fix containers: 1 muffin = 1/2 red, 1/2 green and maybe 1/4 blue if you add a sprinkle of cheese.
