Jambalaya Recipe
Confession time. I normally buy the pre-packaged box of Zatarain's jambalaya and the family LOVES it. However,, I'm not super thrilled with the processed nature of this dish. So, today when I decided to use up some kielbasa sausages I had in the freezer, I didn't have any on hand so I decided to make my own.
I was also running low on fresh veggies so I left most of the optional ingredients listed below out for my first try at this recipe. I did add some green onion I had.
The rice/water content and ratio depends on how much rice to meat you're looking for. I'm feeding a growing teenage boy so I amped up the rice and used about 2 cups. So you see a lot of rice here in this photo.
Ingredients:
One package (approximately 1 lb) of kielbasa sausage
1-2 cups uncooked rice (I used brown basmati rice)
4-5 cups water or chicken stock (I used 3 cups water, 2 cups chicken stock)
Seasoning mixture (see below)
1 onion chopped (optional)
1 celery stalk chopped (optional)
1 red pepper chopped (optional)
1 tomato chopped (optional)
Seasoning mixture:
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp oregano
1/4 tsp thyme
1/4 tsp cayenne pepper
1/4 tsp black pepper
Hot Sauce to taste
Sautee any veggies in olive oil until tender.
Add water, seasoning mix, rice and sausage and as much hot sauce as you can handle (we like it hot!).
Simmer until rice is tender.
